Grown Up Cheese Dippers

Sometimes you just need to throw together something snacky, breadsticks and cheese dip are a favourite of mine for this as they're not too messy/sticky, fairly well portioned out and really easy to customise.
For my all time favourite you will need:
  • Breadsticks & dippy cheese (prepackaged or separate)
  • Chillies (Finger chillies or birds eye are my fave shape for this)
  • Spring Onion
  • Scissors
I literally sit at my desk in between pulls, thinly cut the chillies and spring onion into the cheese section and then try and get a bit of chilli and a bit of spring onion onto each breadstick bite. The other benefit of individual portions is you can double dip/won't ruin a whole batch of cheese if you're experimenting with what you're adding.


15 minute break or make ahead - Mini Pitta Pizzas


  • Pitta bread
  • Tomato passata, tomato puree, pizza sauce, crushed tomatoes, ketchup, whatever you have
  • Shredded cheese
  • Delicious pizza-appropriate toppings

    • Preheat oven to 200C/180C fan or 390F (or use a toaster oven to speed this up)
    • Chuck the topped pitta bread for 8-12 mins or until cheese is melty (or to your preferred colour, depending on what toppings you used)

    Some of my favourite toppings:
    Pesto, sliced cherry/grape tomatoes, olives, spinach
    BBQ sauce, chicken, spinach, red onions
    Tomatoes, basil, mozzarella
    Pepperoni, chorizo, chillies

    You can put together a few pittas in advance, freeze on top of a baking sheet, wrap pittas in cling film (I'd put 1-2 pittas in each cling film for easy separation) and then cook from frozen for maybe 2 mins longer than you would otherwise for a cheaper/easier itch on that pizza scratch.
